Lime juice (if you don’t have real lime), peanut oil, and fish sauce will do the work.

Instructions

  • Fry the chicken until it’s golden brown and then take it out of the pan and set it aside. Leave the oil in the pan to fry the fresh ingredients for extra flavor. 
  • Stir fry the garlic, spring onion, and shallot for 3-4 minutes, and then add the paste. Then stir fry until the curry paste is fragrant.

  • Add some chili, then add coconut cream. Squeeze some lime juice.
  • Put the chicken inside the curry. Add some eggplant.
  • Add the chopped coriander and green basil into the curry mix and stir. Simmer for a little while until the eggplant becomes soft. 
  • Add the zucchini and simmer for about 5 minutes.
  • Sprinkle some spring onion, coriander, and chili on top, and voila you have yourself yummy Thai green chicken curry.

What is green curry sauce made of?
